Adzuki & Rice Cakes
I drove my Mom to Hialeah again today so that she could buy some more pills from the Iridologist I wrote about in a previous post. She must have asked me 10 times what I was going to make for dinner tonight and to be honest, I had planned on left overs. She finally won me over though, and to be honest, it's so nice to finally be able to cook for her after she has cooked for me for the last 34 years.
We decided on Celebrity Adzuki Bean and Rice Cakes with Roasted Yellow Pepper Sauce, both from Vive le Vegan!. I think it's one of the prettiest dishes I've made so far, and we both loved it! It looks freakishly like ground beef after everything's gone through the food processor, which threw me off for a second. It has a really mild taste, and nice mouth feel - not too grainy or mushy. The Roasted Yellow Pepper Sauce gave it a really nice, bright flavor, but I think I put in a little too much water, because it was a little thinner than I would have liked. It does make about 10 small cakes, and we ate 1.5 each and then I sent 2 home for Dad. I froze the other 5 patties uncooked, but one of these days I have to remember to start cutting recipes in half!Product Reviews:
So Delicious Chocolate Peanut Butter: Rich Rich Rich but oh so delicious!
Odwalla PomaGrand: This is newest find. It's a suitable replacement for Pom Wonderful, since they're evil and test on animals. Pomegranate juice for crying out loud! It's not like they're testing for the cure for HIV!
Veggie Munchees: I actually found these at my local market. I cooked them in the toaster oven and they were delicious with a side of Tamari. Perfect for a snack or as an appetizer.
Pie-Oh-My: I couldn't find a website for this one, but it's amazing! It's a single serving frozen apple pie. Vegan of course. I cooked it in the toaster oven and it took about 10 minutes. Thank goodness it's a single serving and I only bought one. It was delicious.That's about it in my world. Tomorrow I'm going to see Melissa Etheridge (she's the only artist I will actually pay money to see) and I'm very excited! Lilly is recovering nicely from her spay surgery and without that name cone around her neck!

That is a beautiful sunset... Did you take that picture?
I recently tried So Delicious for the first time, and it's more than a decent replacement for ice cream (an old favorite). The great thing is, since it's expensive we have to buy it less often--and eating less ice cream is a good thing anyway, right?!

Why haven't I cooked with Adzuki before? I really should pick up this grain and give it a try. The cakes looked yummy and the roasted yellow pepper sauce is a nice addition.

I bought a bag of adzuki beans awhile back. I have seen this recipe in Dreena's book sevreal times now also. I think I'll muster up the intiative to give it a try this weekened.

The ad-PUREZUKE-i cakes look like something I would pay $30 for in a restaurant--brava!
That PB soy cream is one of my favorites, but then again, I love to indulge in rich foods every now and again.

I absolutly LOVE Health is Wealth Veggie Munchies! They also have a Pot sticker that ROCKS too! Also vegan. YUM!
That's weird that the site for the free sample gave you that error...hum...have you tried it again? jw. Well, I hope you can get your free sample! They were good!!!

Wow, that is some sunset photo.
My fave Soy Delicious is the chocolate peanut butter. I almost bought some today but my freezer is filled with other stuff... Soon though i shall be reunited with the frozen treat that makes me smile...
Your mom knows a good thing! It's so cool that you cook for her sometimes, too, zuke. And it's a mitzvah! :o)

Hope that you had a blast at Melissa Etheridge. She must put on an incredible show. Have you seen her live many times before? A talented songwriter and singer, a survivor with some superb messages to share with the world...

I'm a relatively new vegan and also new cook too. Funny- Vive le Vegan is my first and only vegan cookbook. Like you, I definitely need to learn how to 1/2 recipes- but your idea of freezing is so smart. I've found that I haven't used too many recipes from vive beacause I'm so busy that I don't have time to read over and learn a recipe that I just make a quick stir fry or burrito. Your excitement is so inspiring and I'm jealous that you're family is taking to your veganism much more than my family. Thanks for the fun blog and keep on cooking.
