Family Dinner Night
I've instituted Family Dinner Night with my parents at my house. It gives me an opportunity to cook some new dishes and get honest feedback. Now that my dad's home from his little vacation, I have a devoted omni to please as well. I have to say that they're both being strangely supportive of my veganism, and I think a lot of it has to do with the fact that I am actually cooking for the first time in my life.
Tonight I made Chipotle Veggie-Bean Burritos (c'mon, you already know what cookbook it's from!). I pre-prepared the burrito stuffing and rice this morning, so by the time they arrived I just had to re-heat the rice, cook the asparagus, and put the burritos in the oven to heat through.I started everyone off with a sample of my Apple-Hemp Nut Muffins (they loved them and took 4 home), and then an appetizer of the Chipotle Corn Black Bean Soup, which everyone really enjoyed, but we all agreed it had too much cumin in it. I topped the burritos with salsa and Toffuti Better Than Sour Cream, which Dad said didn't resemble Sour Cream in the slightest, but mom and I both thought it was great. Sometimes if Dad knows it's tofu based he instinctively doesn't like it. The other hit of the night was my rice. It was just organic long grain brown rice, but I cooked it with a tsp. of VegeBase in the water and the results were fantastic!
Product Reviews:
Toffuti Better Than Sour Cream: The texture is fantastic, and it adds just the right amount of tang and moisture to dishes.
Amy's Medium Salsa: This is my all time favorite salsa. It has a nice thick consistency and the medium has heat, but it's not too overpowering. I also love that it's chunky.
VegeBase: I've tried a lot of different bouillon brands in the past and I've always found them either too weak or too salty. This one is perfect (and it makes delicious rice)!In other news:
My little girl was spade on Thursday. I'm so grateful my vet is into lasers, so her incision is tiny. She had to spend the night at the vet though, and now she's scared when we get in the car and she follows me everywhere even more than normal. She's also supposed to wear a collar/cone so she can't lick the incision site, but I only have the heart to put it on her at night or when she's alone. Here's a pic of her looking exceptionally sweet earlier tonight.
When she has the cone on, she can barely walk because she tends to walk with her head down and it bashes into everything. Since I'm home or with her most of the time, I've decided to leave it off and just keep an extra close eye on her.

Great tip with the rice. I'll have to pic of some of the VegeBase. What a cute pic of your pal. When our cat Bailey had to wear the cone, I wound up taking it off her as well. She acted drunk with it on. As funny as it was, I didn't have the heart to torment her so.

I love that you do the family meal night.. and it's great your parents are supportive. I've found with some people, you definitely can't tell them what they're eating until after they've said they liked it!
Your dog is so cute.. it's great you can be home with her while she's recovering.

That is the sweetest pic of your pup! I'm glad she is doing well. My cat follows me everywhere (well, he's more of a dog in a cat's body). I hope she recovers quickly and I'm happy to hear you are home with her so much so she doesn't wear that stupid cone.
As for your hit meal, wow! It looks great and sounds like it was all tasty. I can never have too much cumin but I know how it can overpower black bean chili. Your dad is funny... and like many people with a set pretense to the food knowing there is an ingredient in it like tofu. Just don't tell him nextime (hide or transfer the container!). Keep up the great work. I love Dreena's cookbooks too, you always know it's going to work out and taste good.

I think family dinner night is such a fantastic idea. In the fall when my life calms down a bit I'd like to do something similar with my friends and family.

what a great daughter you are.. family night sounds so great, you are lucky to have your parents so close.. your dinner sounds fabulous.. we are all about black beans around here! i think my son would eat a bean and cheese burrito every day if i'de let him.

I love your pup! Oy, hope the spay doesn't take too long for her to heal from, fully. I've never been able to stand putting that collar on whatever dog i've had whenever i've been told to by the vet... Poor baby!
Family night is such a cool thing to do. Isn't it great to have family nearby to do that?! Love it.
Thanks for the great reviews of the products you have tried. My dad is the same way with the preconceived notion/opinion about vegan stuff before he tastes it... *sigh* What can ya do!?
At least your dad (and mine!) will eat the food you put out. Maybe underneath their "way," they both really do enjoy the "weird veggie food."
We can only hope, 'eh?

yummy burrito.
I usually use No-Chicken Stock (in the shelf-stable box) but I've gotta try the vegebase. I have heard nothing but good things. :)

Family dinner nite--what a cool concept. I know all about pleasing omnis--since I'm married to one!-- but I firmly believe good vegan food should just be good food, period. Those Burritos look like they fit the bill.
Hope your pup is recovering quickly!
