Well... I took the test and...

*Thud*

That's the sound of me passing out from a week of 10 hour days, followed by a weekend of studying. My first day of class last week I was handed a 200 page manual which was covered over five 2 -3 hour classes which in turn was followed by training on the floor. I would come home, pass out, wake up early and study, because every day we had a quiz.

One issue I ran into was that every class they ordered one dish of everything we talked about in class. Obviously most of it was meat dishes and me being a vegan was an issue. I compromised with dipping a veggie in each sauce so I would understand the "flavor profile". There was a part of me that felt a little guilty for doing that, like I was cheating or something, but ultimately, I feel ok with the decision. I wish that I could work at a vegan restaurant, but the only one here closed, so I will have to make do in the non-vegan world.

That said, I was very impressed by the entire section devoted to vegetarians and vegans. The even went so far as to discuss why vegans don't eat regular sugar, so why certain "vegetarian" dishes aren't appropriate. I was pretty impressed, and I have to say, I never thought to ask about sugar when I'm interrogating a poor server at a restaurant. Does any else out there ask about sugar in recipes?

Anyway, it was thoroughly exhausting and all for a restaurant job. I took my test on Monday afternoon and it was 68 questions... 9 pages... and none of it multiple choice. I swear it was harder than any test I took in college! Of course, I passed :) I don't fail at things like that. I start on Thursday and I'm actually looking forward to it!!!

I had today off, which was such a welcome relief. Finally no anxiety of an impeding test. I had a bazillion errands to run, but I found some time to cook as well:

This weekend I managed to make some more muffins. Pumpkin Muffins from Vegan with a Vengeance. Oh... my.... goddess... these are SO amazing. They're moist, sweet and fragrant. I love all the spices used... It's like pumpkin pie in a muffin. If anyone needs a little taste of fall, I highly recommend these muffins. They were so good, in fact, that this is a picture of the 1st batch that I made. These went to my brother - he loved them! The second batch is all mine though!

Today I made repeats... Hummus Quinoa Casserole from Vive le Vegan! and Curried Split Pea Soup from Vegan with a Vengeance. I made a half batch of the casserole, but I used all the veggies. I think actually, I could just eat the roasted veggies. It will be a nice quick meal before or after work.


I've always been a firm believer that Split Pea soup should be so thick you could stand a spoon up in it. I don't know if they make it like that here in the U.S., but in Denmark it's the standard way. It should also be pureed in the blender. I always add potatoes to this soup because it helps to thicken it up and I like the texture that it gives the soup.


This weekend I also made some Asparagus Potato soup from Vegan with a Vengeance. Not a fan, although I do love asparagus. Mom thought maybe there wasn't enough salt in it, but I wasn't terribly fond of the texture. It seemed a bit... gelatinous. And when I took it out of the fridge tonight, I wasn't too fond of the smell either.


I made an interesting find at Whole Foods today. It's called a Monstera fruit. According to the website it's a cross between a banana, mango and pineapple. It was $5, but I just couldn't resist trying something new! You wait for the little "scales" to fall away naturally and then eat the fruit bit by bit. I'll post more about the fruit when I finally get to it. Has anyone else out there tried one of these?

Never a doubt in my mind that you'd pass and get the job! Sorry that it's work, and all that...;o)

Those muffins look absolutely wonderful. I love the fragrance of pumpkin spice in the fall....heck, I just love fall!

In all the years I worked in produce, conventional and organic, I never saw a fruit like that. I can't wait to find out what it's like.

Your muffins look amazing, mine didn't rise as pretty as yours did, but I don't think I filled the muffin cups very full when I made them. Congrats on the job, I had NO idea that servers had to go through so much!

Wow, you made me exhausted just explaining your whole week. I'm glad you had a day off, passed the test, are starting tomorrow, great!

I've never seen a fruit like that one. I'm interested in what it looks like from the inside, or maybe you could show how you eat it piece by piece.

About you trying the sauce at the restaurant: I couldn't do that, but I think it is good (for your job) that you did and you can now help customers for the flavor profile. I find it interesting about the sugar, and the newest issue of VegNews talks about sugar and when I go out, I just try to order something as whole as possible (vegan of course) and usually don't be picky about the sugar. I'm sure there's a lot more un-vegan things I run into daily than refined sugar.

Now that soup... it looks so funny with the spoon standing right up. I bet it's fantasticly thick though. Great to see you back posting. I am looking foward to your new goodies.

10-hour days! ZOINKS! And then a 200-page manual, classes, floor training and aaaaaaaaiiiiiiiiiieeeeeeee! What ELSE? Zuke, you are so busy, i can't believe you had time to sleep, much less shop, bake, cook and post on your blog. Good for you!

The meat dishes would bug me, but good for you that you could deal with that. This "flavor profile" would be impossible for me, Zuke. I really applaud you for your decision. My first job was working in a hospital for eating disorders/alcohol rehab, working in the dietary department, and i had to make food. All sorts of it, and it was not easy for me!! I had been a vegetarian for less than two years when doing that one...

I like that the peeps discuessed why why vegans don't eat regular sugar! That IS impressive!!

Way to go on passing such an insanely challenging test, Zuke. I am, again, truly impressed. And you should be too with yourself!

I'll be interested in hearing how it goes when you start tomorrow (Thursday)!

Those pumpkin muffins (VwaV) look so good!!! Wow, moist muffins are the best. Otherwise, ya might as well make scones, right?! If it's like pumpkin pie in a muffin as you say, it sounds like a cupcake which means kleo here would be salivating big time! Nice of you to give the first batch to your bro. What a nice sis you are!

Hummus quinoa casserole and the curried pea soup also sound spectacular. I could also just eat the veggies, by the way! And wouldja look at your thick split pea soup? WOW! Pure murky beauty there, Zuke. Adding potatoes is a fab idea. I'll remember that!




That monstera fruit looks so cool. Wow, a cross between three of my fave fruits, i can't believe it! Mango, pineapple and banana? WOW! I would have totally forked out $5 for it as well. I can't wait to hear what you think of this little cutie.

I knew you'd pass the test... It's great that your restaurant offers vegan education like that to the servers... I'm very impressed!

I am a HUGE fan of pea soup too... I've never totally pureed it.... but I will do that the next time. I'm sure I'll love it.

Your job sounds exhausting. I can't imagine having to study for exams anymore..yuck
the muffins are such a great fall flavour...yum. I would add cranberries.

Your soup is crazy thick. Not sure I've tried split pea soup that is as thick as yours before.

Wow, huge post! I'm sure your decision about the sauces was difficult to make and I'm glad that you were able to feel okay about it... Awesome about educating the servers on vegan SUGAR! Oh, your muffins look fabulous--I have plenty of pumpkin around here, and that recipe is way up top on my list of things to try soon!
